dinner by pinterest v. 3 aaand, winner winner.

dbp is back!  i'm ready to show a couple more delicious recipes that were made by yours truly.  

sweet chili lime chicken with cilantro couscous.
the mcfadden family loves couscous.  we are definitely fans.  this was so easy to make.  if you can boil liquid, you can make couscous.  the couscous cooks on its own while you cook the chicken, mix the glaze and then glaze the chicken.  very yummy and flavorful.  we served ours with szechuan green beans b\c we're eating more vegetables (successfully) this year!  can't wait to make this again!  pinned here.

slow cookers are genius inventions.  they basically mean i don't have to do anything but throw a bunch of uncooked stuff in and then smell my dinner being cooked all day.  this one took 4 ingredients (5 if you want jalapenos) that you pour on top of chicken breasts.  plus, depending on what kind of salsa you choose- this could taste different every time you make it.  we used a corn & black bean salsa from archer farms.  the recipe suggested eating it alone, but we had leftover corn tortillas, so we made mini tacos.  pinned here.

dinner by pinterest v. 2

so, my first edition of dbp seemed to be a hit, so i thought i'd do it again.  i'm always cooking- so much that i have a huge problem where i rarely make the same thing twice- even if there's something i make that i really love.  i've gotten a little better about pulling out the repeats- in fact, i've already made one of these meals twice, and i'll definitely be making it again...  bon appetit!

if you have ever read the haps, you've probably seen mandy's post about making crock pot buffalo chicken.  this recipe is EVERYTHING it's been advertised as.  ah-maz-ing.  we've already made it twice, and each time we've made it, it's made so much food that it lasts us nearly a week!!!  it's only 3 ingredients...  chicken, a bottle of frank's red hot buffalo wing sauce, and hidden valley ranch dip mix.  the recipe calls for butter as well, but we've skipped that step both times and i've been really happy with it.  pinned from here...

so easy... 1.  add chicken (thawed or frozen) to crock pot and top with the sauce and dip mix.  crock on low for about 5-6 hours.  2.  with 30 minutes to go, remove chicken and shred.  3.  add back to the crock and let it absorb all the yumminess...  enjoy!  we had our sandwiches on filone bread- and i topped mine w\ crumbled bleu cheese.  one sandwich is usually enough- and i usually serve chips or a veggie as the side.  when we're all out of bread, we use the leftover meat to make a quesadilla with mozz & bleu cheese (for me).  the meat is a little spicy, but even ian enjoyed little bites of the chicken from our sandwiches.

yet again another delicious recipe that i saw on the haps.  and again, so simple.  chicken, bottle of bbq sauce (any will do), a can of pineapple chunks and minute rice.  i don't normally buy minute rice, and i didn't feel like making regular rice, so we made sandwiches out of ours.  again, it's so easy- 1.  add the chicken, top with bbq sauce and the drained pineapple and cook on low 5-6 hours.  2.  with 30 minutes to go, remove the chicken, shred and add back to the crock to  soak up the sauce.  since i was too lazy to make rice, we had ours on hawaiian rolls (they have the buns).  the sweetness of  the rolls was just too much yummy.  we made the sandwiches until we were out of bread and then went the quesadilla route again- mozz cheese, bbq sauce mixed w\ a little ranch and the chicken... nom nom.  pinned from here!

and apparently i didn't take a photo of the deliciousness that was this sandwich... although i swear i did...  you'll just have to follow the links to deliciousness....  so you'll just have to imagine!

wish list friday: foods to make & bake

i love love love to cook.  there are a lot of things that i am mediocre at, but cooking is not one of them.  and while i have the occasional kitchen mishap, more times than not i am making something that makes me say, "dang, that is good."  i'll stop tooting my own baking/making horn and show you what's on my wish list of things that need to very quickly make their way to mah belly, or another reason pinterest should be called "fat-terest."

 looking at this list is causing me to gain weight

1.  homemade samoas - girl scout cookies are sold once a year so i don't eat a box week... but now you're telling me i can make them myself?  uh oh.
2.  buffalo chicken tacos - you had me at buffalo
3.  cilantro lime chickpea salad - i love salads like this.  it looks so fresh and yummy!!
4.  7-layer greek dip - welcome to the party in my mouth!
5.  christmas cake - a gorgeous, but simple cake from my friend maegan!!
6.  crockpot breakfast casserole - sounds like a great christmas morning meal
7.  malibu pina colada cupcakes with lime cream cheese frosting - love lime & coconut!
8.  creamy avocado salsa verde - combine 2 of my favorites + i love dips!
9.  gluten-free shirley temple cupcakes - these are just so pretty + they're gf!
10.  red velvet brownies with white chocolate buttercream - uh, yum.  love red velvet- although i used to despise it!

review & giveaway! dinner revolution!



if you know anything about me, you know i love to cook.  i live for it.  it's my greatest source of relaxation & frustration!  i also tend not to cook a lot of the same things over & over- i always want to try something new.  i do have favorites, but i love being adventurous- always trying something new!  i was so thrilled when i got the opportunity to review & share with you a fabulous new cookbook- dinner revolution.

cooking has become less of a joy & more of a frustration since having ian.  it's hard to cook when you're chasing a baby.  whether it's stopping him from breaking dishes or going through all our cabinets, or having him pull at my leg screaming for me to feed him what i'm attempting to cook- when i can't even get it in the pan!  i tend to go for the complicated when i need to go for the simple.

chef jeff's dinner revolution is full of family friendly recipes (over 200!), with 10 ingredients (or less) and they take 30 minutes or less to prepare (really)!  i wanted to prepare a couple recipes before i shared this with you- and i can't wait to prepare more....  oh, and the simplicity of these dishes means less dishes (to wash).  boy is dave happy about that!

in our house, monday & thursday are pizza/corndogs/easy food night.  i have to work, and don't have time to cook.  i was actually able to make a dinner revolution meal- sit down & eat with my family- and get out the door to work- so much better than the same old frozen pizza.  added bonus- ian ate these meals with us!  we're in the picky toddler stage now- so anything i can get him to eat is points in my book!!

what i made: palak paneer & apricot chicken!  palak paneer:  i've dabbled in indian cooking once or twice before, but i've never made palak paneer.  i've had it as a frozen meal though, so i wasn't expecting much.  well, it was really good- and this was one that really shocked me when ian ate it- dave enjoyed it as well.  plus, it made so much that we had leftovers.  apricot chicken:  sweet chili sauce is a favorite in our house, so i was immediately drawn to this recipe- plus, i seriously couldn't believe that i would be finished making chicken in 20 minutes.  add in a simple side- and i had dinner ready when dave was walking in the door from work!

next up in our kitchen:  buffalo chicken & bleu cheese meatloaf, and from there, i can't decide, there are so many delicious options, and if you know me, i'm going to try them all!!

cute as pie

besides colder weather, sweaters, great boots, and football... one thing i think of when i think of fall is all of the delicious food and baked goods that come with the holiday season.  one of my favorites: pie.  i am a fan of pie- pumpkin, apple, cherry, etc.  i'm not picky.  when i came across this pie pan at macy's, i just had to have it


absolutely adorable.  it's from the martha stewart collection- which always has new and interesting kitchenware, gadgets and accessories (i have her to thank for outfitting my kitchen in "martha stewart blue").  the bottom of the pie pan reveals a recipe for pumpkin pie!  you'll want to start serving pie asap just to cut away and reveal the bottom of your pan!  we went ahead and purchased this for a family member for christmas, but if i accidentally ended up keeping it for myself... oops.  there was also an accompanying apple pie dish, but i can't seem to locate it anywhere, which is really upsetting because macy's has a habit of discontinuing it's msc, and this is a relatively new item (i'm still upset about the kitchenaid mixer discon.).  it sure beats a boring old glass or metal pie pan!  get it now while it's available, and on sale for only $14.99- what a steal!

mommy cooks (bakes) - oatmeal chocolate chip lactation cookies

yes, you heard it right here.  there is such thing as "lactation cookies."  not only are these cookies good for helping to boost your milk production, they're also delicious!!  they taste just like oatmeal chocolate chip cookies!  need a little boost?  give these a try!  don't need a boost?  remove the brewers yeast.  they aren't the healthiest cookies, but I am definitely planning on tweaking the recipe next time around

ingredients:
1 cup butter
1 cup sugar
1 cup firmly packed brown sugar
4 tablespoons water
2 tablespoons flax seed meal
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups oats
1 cup chocolate chips
2-4 tablespoons brewer's yeast

directions:
preheat oven to 350°.
mix the flaxseed meal and water and let sit for 3-5 minutes.
beat butter, sugar, and brown sugar well.
add eggs and mix well.
add flaxseed mix and vanilla, beat well.
sift together flour, brewers yeast, baking soda, and salt.
add dry ingredients to butter mix.
stir in oats and chips.
scoop onto baking sheet.
bake for 12 minutes.

awesome mom check-in

i'm not one for tooting my own horn, but i kicked some serious ass today/tonight. 

i'm on day 7 of the shred- and it's going well.  i'll admit, i didn't shred yesterday, as i had pregnancy-like tiredness.  btw, anytime i have a pregnancy like "symptom" i get really paranoid.  being pregnant is awesome- but this is neither the time or place.

after shredding and getting ready, we headed to the grocery store- we had been making just small trips while our friend was staying with us, and it was time for a real trip.  so we got our groceries, some new pillows for the bed, and a 5-piece patio set (in late august, yes).  after she had finished ringing everything up, the total was over $285- then we gave her our coupons... our new total- $202!!  we basically got the patio set for FREE!  The receipts at target always print what you saved and we saved $91!!  couponing = total pain in the butt that is so worth it!!

after we got home, i made dinner- which was pretty much a 6-dish meal!  coleslaw, shrimp tacos (husband grilled those for me), guacamole, mexican rice, black beans and apple bars w\ homemade whipped cream for dessert!!  i managed to do all of that in about an hour & 15 minutes.  it was awesome...  photo evidence:


in between all that i made baby food for ian:  plums and yellow squash- plus, i froze some canned pumpkin for him.  i had to put nectarines, peaches, and more peas & apples on hold for another day.  i can only do so much...

myobf

#20 on the 30 before thirty - make ian's baby food.  let's just say the making of it is easier than figuring out when to give him what, when to start mixing, and what to mix.  sheesh.  behold, i will show you how to myobf (that's make your own baby food)...

i went with sweet potatoes- which will be food #2 3 that we are introducing.  we started with acorn squash, which made ian's skin break out, and if i had to write a blog on how to make baby avocado- then i shouldn't be blogging. 

i decided to make ian's baby food because of how easy everyone said it was + i'm always here + i love to cook + i have nothing better to do.  it also tastes better- have you ever eaten jarred baby food?  at my baby shower, we played a game where i was blindfolded and had to taste several different flavors of baby food and identify them.  i didn't do well- you couldn't even tell what many of them were!  ick!  fresh food just tastes better!  i also think it helps us to eat healthier- i just buy extra- cook it all at once, and then there's enough for husband & i to have what ian has.  more veggies = healthier.  healthier = thinner.  thinner = me fitting into my clothes.

here's how easy it is!  myobf- sweet potato style. 

1.  scrub your potatoes.


2.   prick holes into the potatoes

3.   microwave potatoes until tender (you can also bake in the oven for 60 min, but this was much quicker).


4.  remove potatoes from microwave carefully (hot potato isn't just a game- it's a fact).  slice potatoes open to let cool- this way you can handle them without receiving 3rd degree burns.

 
5.  scoop the delicious, orange sweet potatoey flesh out and into your blender/food processor.


 
6.  add 1\2 cup of water to potatoes and puree to desired consistency, adding more water if necessary.
 
7.  desired consistency.  


 
8.  pour potatoes into ice cube trays if freezing (i suggest freezing because most foods are good for a month- some 2 months, while refrigerated food needs to be used within days).  i got my trays from my Fresh Baby So Easy Baby Food Kit, but you can buy them anywhere for cheap!


9.  freeze 8-10 hours or overnight!


10.  once frozen, remove cubes from trays and store in ziploc baggies.  be sure to label baggies with date and food.  my potatoes were still frozen, but here are my frozen apricots & acorn squash!


and there you have, 10 easy steps to making your own baby food- all it takes is 30 minutes.  done and done.

mommy reads! book review: the baby food bible



i was finally able to finish the baby food bible last night.  the baby food bible touts itself as "a complete guide to feeding your child, from infancy on."  while the book was very informative, i don't know if i'd go as far as to call it the bible of baby food.  starting baby food is yet another confusing process in the step of child rearing.  everyone has a different opinion on what is right and what is not.  i have 3 different books regarding baby food, and each of them list a different group of foods as first foods. 

the bfb starts out talking about childhood obesity rates, and how children are now eating french fries as their vegetable of choice.  it then goes into saying that starting your children out with a variety of healthy foods will help them make healthy choices well into adulthood.  i definitely plan on introducing ian to a variety of foods while he's young.  i love food- i love trying new food and being adventurous.  i want him to have the same healthy appetite!  bfb has informative charts listing various foods, and when they should be introduced to your child- it also lists daily nutritional requirements for your child for things such as fiber and dairy.  

my favorite part of the book (and the reason it took me so long to read it) was chapter 4:  superior foods.  chapter 4 had an a-z (apple to zucchini) listing of the best foods for baby with cooking instructions, ways to incorporate the food into family meals and any precautions to take.  i wish i was lying when i said i took the entire chapter and made a detailed excel spreadsheet with all the foods listed.  i must say though, even that chapter was a little unorganized in its writing.  the same information wouldn't be listed for each food item- for instance- each food would usually list the following:

- the food w\ some information about it
- how to prepare it before cooking
- how to cook it in the oven/stove
- how to microwave it
- what to do once it's cooked
- how long it will keep in the fridge/freezer
- how long it can sit before it needs to be prepared

the reason i say usually is because with some of the foods, it would be missing some of this information.  consistency, people!  the book was downhill once this chapter was over.  the next chapter had recipes, followed by how to feed your toddler, school-age child, and different precautions (nitrate poisoning, allergies, etc).  then like that the book just abruptly ended.  i was expecting at least a summation of everything in the book, but what was i really expecting...  

so obviously i wasn't a huge fan of the book.  chapter 4 was its only saving grace.  other than that the author sounded a bit pretentious at times, and she only had daughters, so a lot of the charts she listed pertained to nutrition for girls.  i am definitely going to use my excel spreadsheet that i spent hours on as a guide while cooking- and if i don't, well this book was a waste of time.  

rating:  2.5\5.  without chapter 4: 0.5\5.

next up.  i'm reading say you're one of them.  i should finish this much quicker because it doesn't require me making a ridiculous spreadsheet.  i've decided to alternate baby books with "real" books, or i'll most likely go insane.

pretty much a perfect evening

wednesday night is my favorite night.  i work monday & thursday nights, and we spend tuesday night having dinner w\ my mother in law & watching dave play softball- so wednesday, it's just us.  

husband came home, we walked the dogs.  put ian down for a "nap" then i made dinner.  it turned out deliciously.

hello saffron couscous w\ mediterranean chicken (okay, so it's not saffron couscous because apparently saffron is $12 for 2 teaspoons.  i still wonder what difference it would've made)

then we had dessert.  and a delicious summer dessert at that!


strawberries & cream.  i didn't make the cream myself (but i thought about it) and i probably have way too much, but they were so good.  later, when ian went to bed, mommy had more strawberries that had been soaked in amaretto... mmm.

we didn't think it was fair for mommy & daddy to have all the fun, so ian had his first taste of people food.  he seemed to enjoy strawberries too!

yummy!!  we'll probably start solids soon, but not just yet.  this was just a taste!

after dinner, we headed out to the pool.  our first experience with ian & the pool didn't go very well, but we had different results this time. he probably stayed in the pool around 30 minutes - long enough to turn pruney - and he kicked and splashed & giggled the entire time!!

after pool fun was over, it was time for a bath, bottle and bed.  a truly wonderful evening.

push gifts

what is a push gift, you might ask?  a push gift or push present is a gift a husband gives their wife upon the birth of their child.  yes, it is another excuse to receive a gift, and what woman doesn't want that?  yes, the birth of your child is definitely gift enough, but there's got to be some thanks for the baby weight you may never lose, having to give up margaritas for 9+ months and the fact that your lady parts may never be the same again.  i was lucky enough to receive a push gift (i did drop a few hints) and i must say husband did a really good job.  it doesn't have to be expensive (although they can be, depending on the husband (or wife)), and it does help to have some sentiment to it.  here's how husband did...

husband got me this sweet little necklace from under her charm.  it has my name and baby's name on it.  i wish it had husband's name too.  but that will come later!  what i love about it is that it has ian's name on it, and that it's close to my heart... just like ian.  ;)  plus, it's not overdone, it's just simple, and it goes with pretty much everything!!

my heavens, i'm in LOVE with this mixer.  of course, it appears to be discontinued at the moment, but mixer, you will be mine one day!

so besides my necklace, husband also got me the most hilarious book ever:  The Diaper Diaries: The Real Poop on a New Mom's First Year.  we read parts of it after they had started the induction and were in tears over some of the ridiculous things in there.  the nurses probably thought we were crazy.  i read the rest of the book (when i could stay awake) during middle of the night feedings, and on more than one occasion i scared ian by laughing like the crazed, sleep-deprived woman i was. i'd definitely recommend it to all new mom's, and i plan on reading again when ian is a year old to see how true it really is.

so, is jewelry not your thing?  how about a family push gift?  here are some awesome ideas.

your first family vacation (visualize baby here- slathered with spf 1,000 and under an umbrella, of course).

a flat-screen hd television!  (i realize most people have one of these already, but if you're losers like us, you still have a 20-inch regular tv.  you sit on your couch and squint just to see what's going on with your shows).


there's an appropriate push gift for every budget.  and although a gift is nice, the best gift you can give your wife isn't a thing.  it's your love and support during labor and delivery and the crazy weeks (months, years) afterwards!  helping out around the house with things she can't do, and taking part in late night feedings (or taking a turn- if she isn't breastfeeding, of course).  

husband's shouldn't be left out though.  i got my husband what i like to call a "coach gift" (i don't think that's a credited term).  that's for another day though...
